orzo

lemon juice

almond milk

plain and unsweetened

salt

parmesan
⅓
cup
feta cheese

cups
spinach chopped

cup
parsley
Instructions
Heat the olive oil in a large pan or pot over medium-low heat. Add garlic and sauté for about 30 seconds.
Add the orzo and toss to coat it with olive oil.
Add lemon juice, almond milk, and salt and stir to combine.
Cover and bring to a boil. While you're waiting for it to boil, chop the spinach.
Once the orzo is boiling, reduce heat and cook, covered, for approximately 6-7 minutes until the orzo is al dente.
Turn the heat off and stir in parmesan, feta, spinach, and parsley until well combined. Serve immediately to maintain the recipe's creaminess!
