Cover diced sweet potato with water and microwave for 5 minutes. Drain the water. Add sweet potato to a food processor.

Add the remaining ingredients, except for pecans, to the food processor and blend until just smooth.

Scoop batter into non-stick muffin liners. (Optional) Top each muffin with a sprinkle of toasted chopped pecans.

Bake in the oven at 350 degrees Fahrenheit for 20 minutes.
