Cheesy Vegetarian Taco Casserole  (Easy!)

Layer the casserole

Line the bottom of a casserole dish with corn tortillas. Spread refried beans over the tortillas followed by pinto beans.

Sauté tofu/plant-based protein.

Sauté the tofu in olive oil with taco seasoning and onions. Add  tofu mixture to the baking dish.

Finish assembling casserole

Layer on corn and spinach. Add dollops of yogurt/sour cream and smooth it out evenly. Layer strips of corn tortillas and top with shredded cheese.

Bake

Bake in the oven at 425 degrees Fahrenheit for 15 minutes.
