Vegetarian One-Pot Tortellini

I have added this new Vegetarian One-Pot Tortellini recipe to my repertoire of one-pot meals!
If you haven’t noticed, I’ve been on a one-pot meal kick lately. I mean, they’re just where it’s at for us busy mamas! They’re easy to prepare, easy to clean up, and they simplify mealtime tremendously. Some of my favorites are my Vegan One-Pot Tomato Vodka Pasta, One-Pot Vegan Red Lentil Curry, and One-Pot Creamy Hummus Pasta
My goal, always, is to make prepping dinner as easy as possible which is why I’ve been creating so many meals requiring only one dish lately!
Simple One-Pot Meal
This Vegetarian One-Pot Tortellini combines garlic, spinach, mushrooms, and plant-based sausage with a creamy dairy-free pink sauce. Though the sauce itself is vegan and dairy-free, you would need vegan tortellini should you want to make this meal completely vegan and dairy-free. The brand Kite Hill offers a vegan tortellini.
How to Make One-Pot Tortellini
This Vegetarian One-Pot Creamy Tortellini is such an ideal and easy weeknight meal because it’s so simple to make! Let’s get cooking!
STEP 1
Start by sauteing the onions, mushrooms, sausage, and garlic in a large pot.
STEP 2
Next, add the tortellini, coconut milk, tomato sauce, water, salt, dried basil, and a pinch of sugar (I use coconut sugar). Cover and bring to a boil.
STEP 3
Lastly, throw your spinach in, reduce the heat, and cook for another 7-8 minutes until the tortellini is cooked through and the sauce starts to get soaked up. That’s it!
How to Customize This One-Pot Tortellini For Picky Eaters
- Try to pick out the tortellini only and leave any additional ingredients like sausage and mushrooms on the side for them to try if they would like to.
- Wait to add the dried basil until after you’ve served your toddler – my toddler doesn’t like the “green things” on the tortellini.
- Reserve some of the uncooked tortellini and cook it separately (this will obviously use another pot though). Then add a little store-bought pasta sauce to it.

Vegetarian One-Pot Tortellini
Ingredients
- 2 tablespoons olive oil
- ½ onion , chopped
- 8 ounces mushrooms , diced
- 2 plant-based sausages , diced
- 3 cloves garlic , minced
- 2 (10-ounce packages refrigerated tortellini, (I like to use spinach and cheese tortellini)
- 1 cup unsweetened full-fat coconut milk
- 1 cup tomato sauce
- 1 cup water
- ½ teaspoon salt
- 1 teaspoon dried basil
- Pinch of sugar, (I use coconut sugar)
- 1 cup spinach
Instructions
- Heat a large pot over medium heat and add olive oil.
- Next, add onions, mushrooms, and veggie sausage and saute for 5 minutes, until the sausages start browning slightly.
- Add in garlic and saute for another 30 seconds or so.
- Add tortellini, coconut milk, tomato sauce, water, salt, basil, and a pinch of sugar and stir to combine.
- Cover and bring to a boil.
- Once boiling, uncover and add spinach. Then reduce heat and cook for 7-8 minutes, until the tortellini is cooked through and the sauce has started to soak up. *Note: As the tortellini cools, the tortellini will start absorbing the sauce, so don’t worry if it seems too saucy at first!
