I love this green beans recipe for Thanksgiving or Christmas dinner. It’s a great way to add some bright green color to your table and I find that they just have the best flavor and texture!

Roasted Green Beans

I’ve never been a big green bean fan until I tried my mom’s Roasted Green Beans With Slivered Almonds. They changed the green bean game for me. 

As I’ve gotten older, I have actually begun to like green beans cooked in various ways, but roasted green beans with toasted almonds remain my very favorite way to eat them. Even my 5-year-old devours these green beans as if they were french fries!

With my mom’s permission, I wanted to share her recipe with you so that you could have an easy side dish for green beans for the holidays up your sleeve. 

In her recipe, you blanch the green beans first, but here I’ve taken out this extra step and made it even simpler with no blanching required!

Roasted Green Beans Ingredients

  • Fresh green beans
  • Extra virgin olive oil or avocado oil
  • Sea salt and black pepper
  • Butter/ghee/olive oil
  • Slivered/sliced almonds

HOW TO MAKE OVEN-ROASTED GREEN BEANS


STEP 1 – Roast the green beans

Line a baking sheet with parchment paper and spread out green beans evenly in a single layer. Drizzle olive oil over the green beans and toss to coat them. Sprinkle them with sea salt and black pepper.

Cook green beans in the oven at 400 degrees Fahrenheit for 20-25 minutes until they start getting crispy and look like they’re starting to shrivel. 

STEP 2 – Sauté the almonds

While the green beans are cooking, melt ½ tablespoon of butter in a small pan over low heat. Add slivered almonds and saute, stirring frequently, until they are golden brown. Be sure to monitor these carefully so that the almonds don’t burn. 

STEP 3 – Toss almonds with the green beans

When the green beans are done cooking, toss them with slivered almonds, transfer to a serving platter, and serve.

How to Store Roasted Green Beans with Almonds

Once the green beans have cooled, store them in an airtight container in the fridge for up to 3-4 days.

Do the green beans need to be blanched before roasting?

Nope! While blanching green beans beforehand is very common, I have found that you don’t really need to bother with this step in this recipe! I love that this keeps the cooking time down and makes it an easy recipe. 

Can I make this green beans recipe vegan?

Absolutely! You can use vegan butter to sauté the almonds or you can use olive oil instead. You could also just add the slivered almonds to the roasting green beans at about the 20-minute mark and let them toast naturally in the oven for the last 5 minutes that the green beans are cooking.

Can I make these roasted green beans ahead of time?

Technically you can, but I recommend making them close to when you plan to eat. If you’re making them on Thanksgiving, it is fine to make them a little in advance as they don’t need to be served hot, room temperature is okay. These green beans are still delicious when re-heated as leftovers, they just present better visually when eaten soon after roasting them.

Help! I’m overwhelmed with cooking Thanksgiving dinner. Is there an easier way to cook the almonds?

Yes! Instead of cooking them on the stove and watching them closely, you can simply spread the almonds out over the green beans after the green beans have cooked for 20 minutes and have them cook together for the last 5 minutes. While the almonds won’t have a delicious buttery flavor this way, they still taste excellent.

Ingredients
 

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • ¼ teaspoon sea salt
  • Black pepper , to taste
  • ½ tablespoon butter, (can sub with ghee or olive oil)
  • ½ cup slivered almonds

Instructions

Notes

To save you a dish to wash and something to monitor closely if you’re making these for Thanksgiving, you can toast the almonds with the green beans instead of sauteeing them. To do this, spread out the almonds over the green beans after the green beans have cooked for 20 minutes and have them cook together for the last 5 minutes. While the almonds won’t have a delicious buttery flavor this way, they remain excellent tasting.
