These gorgeous little bundles are wrapped in puff pastry, making them a doughy delight. The combination of fresh green beans with brie cheese and cranberry jam is perfect for Thanksgiving or Christmas! This is one of my go-to recipes for the holidays!

Green Bean Bundles Recipe
These Green Bean Bundles are very simple to make and are sure to be crowd-pleasers! You can either choose to use Cranberry Jam for a sweeter taste or Dijon Mustard for more savory bundles! The best part is no blanching of the green beans is necessary! Easy peasy.
WHAT YOU’LL LOVE ABOUT These Brie and Cranberry Puff Pastry Bundles
- Easy. This recipe doesn’t call for blanched green beans and is such an easy appetizer! You can choose to heat the green beans for 3 minutes in the microwave to give you more tender green beans or just cook them raw. Simply layer the ingredients on a slice of puff pastry, roll them up, and bake!
- Unique. As far as green bean recipes go, I find that these make a fairly unique appetizer, making them a lovely conversational piece at a holiday party!
- Holiday Flavors. These green bean bundles have all the Thanksgiving flavors with green beans and cranberry, but they’d be wonderful for Christmas as well…or really any time of the year!
- Versatile. Though intended as an appetizer, these green bean bundles could be served as an easy side dish!
Green Bean Bundle Ingredients
- Puff pastry sheet: you can use crescent dough if preferred, just be sure to follow the package directions for cook time.
- Green beans: trim the ends of the green beans before assembling. If you have another vegetable you’d like to use instead of green beans, feel free to use it! Asparagus would make a great replacement, though I would use Dijon mustard instead of jam in that case.
- Brie cheese
- Cranberry jam: you can use any kind of jam, really! Alternatively, you can use Dijon mustard if you want a more savory appetizer!
- Olive oil: to drizzle on top of the green bean bundles. You can use an alternative oil such as avocado oil, which has a higher smoke point, if desired.
- Black pepper (optional)
How to Make Green Bean Bundles
STEP 1 – Quick cook green beans
In a large microwave-safe bowl, cover green beans with water and microwave for 3 minutes so that they are bright green. Strain the water and set aside.
Note: You don’t have to pre-cook the green beans, they can be rolled up in the bundles raw, but the texture of the green beans will be more crunchy than when you pre-cook them slightly.
STEP 2 – Prep the bundles
Roll a sheet of thawed puff pastry out on a work surface sprinkled with flour, and cut it into 9 squares.
Spread 1 teaspoon of cranberry jam (or preferred jam) or Dijon mustard on each square. Next, divide green beans amongst each square, about 2-3 green beans per square (the ends will be sticking out on either side of the puff pastry).
Finally, place a piece of brie cheese (or two!) on top of each green bean bundle and roll each puff pastry square up.
STEP 3 – BAKE
Place bundles in a single layer on a large baking sheet lined with parchment paper. Drizzle the tops with olive oil, sprinkle with black pepper (if desired), and bake in the oven for 15 minutes at 425 degrees Fahrenheit, until golden brown.
Note that the cooking time may vary depending on your oven. Allow to cool slightly, transfer to a festive serving platter, and serve!
How to Store
Store in an air-tight container in the fridge for up to 3-4 days. Reheat leftovers in the microwave.

Nope. I prefer them slightly cooked (microwaved for about 3 minutes), but you can definitely assemble the bundles with the green beans raw and have their only cook time be the 15 minutes they’re in the oven. The green beans will still be slightly crunchy, but they’re still yummy this way (and it saves you a bit of time)!
I actually made a homemade cranberry jam in about 5 minutes! Heat frozen cranberries in a small pot over medium heat along with 2 teaspoons cornstarch, 1 teaspoon lemon juice, and 1 tablespoon maple syrup. Stir frequently and mash down the cranberries when they start softening. Eventually, the consistency will turn into more of a jam-like consistency. You can also replace the cranberry jam for cranberry sauce or you can replace it with an alternative jam! I’ve tried this recipe with cherry jam and I’ve tried it with raspberry jam and both were delicious!
Sure! Obviously, adding a slice of prosciutto to this recipe will mean it’s not vegetarian anymore. If you choose to add prosciutto or even a bacon slice, I would opt for Dijon mustard instead of jam.

Hi Syl! Great question and I understand your concern! I have not personally tried to freeze them prior to cooking and am not entirely sure how they’d turn out. Refreezing the puff pastry and the brie cheese may affect the quality and texture. I’m sorry I don’t have a better answer for you! If you do try to freeze them prior to cooking, I’d love to know how they turn out!
