Vegan Blondies With Chickpeas

Chickpea Blondies
I don’t know about you, but I absolutely LOVE blondies. They’re a delicious cousin to one of my other favorite desserts, the brownie, minus the cocoa powder. I have some healthier brownie recipes, like my Fudgy Vegan Date Brownies and Peanut Butter Chickpea Brownies, but I’ve never made a healthy blondie before.
So today, I’m changing that!
These Chickpea Blondies are vegan, gluten-free, and refined sugar-free. They’re soft and gooey, yet firm enough to hold in your hand. I’ve added chia seeds to the recipe to add some healthy fats, fiber, and protein.

I love that these vegan blondies are filled with protein! They get their protein from:
Chickpeas
Peanut butter
Chia seeds
Talk about a dessert that actually fills you up!
Vegan Blondies Ingredients
Chickpeas
Salted creamy peanut butter
Maple syrup
Vanilla
Chia seeds
Almond flour (or Gluten-Free 1:1 Baking Flour)
Baking soda + baking powder
Chocolate chips
How to Make This Vegan Blondie Recipe
STEP 1 – Process ingredients
In a food processor, blend all of the ingredients except for the chocolate chips, until the batter is smooth. Add in the chocolate chips and pulse the food processor a few times to mix them in.
STEP 2 – Prepare baking dish
Next, pour the batter into an 8×8 baking dish lined with parchment paper and spread the batter out evenly. Top with more chocolate chips if desired.
STEP 3 – Bake
Bake in the oven for 20 minutes at 350 degrees Fahrenheit.
*Note: As eager as you may be to dive right into the blondies when they come out of the oven, I recommend you allow them to cool for 10-20 minutes first. The blondies will be quite soft when they come out of the oven, so this gives them a chance to firm up a bit. They will still be soft after they cool, they will just be easier to cut.
How to Store Vegan Blondies
Store the blondies in an air-tight container in the fridge for up to 5 days.
Flour Substitutions
You can replace the almond flour with Gluten-Free 1:1 Baking Flour or regular flour. Keep in mind, this may change the texture of the blondies.

- ½ cup salted creamy peanut butter, (if you're using unsalted peanut butter, add ¼ teaspoon salt to the blondies)
- ⅓ cup maple syrup
- 2 teaspoons vanilla
- 2 tablespoons chia seeds
- ½ cup almond flour, (or Gluten-Free 1:1 Baking Flour)
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ cup chocolate chips + more for topping, (optional)
