Apple Banana Muffins

I’ve been making these applesauce banana muffins for the last five years! I originally made them for my son’s 1st birthday party, since we were not giving him anything with added sugar at that point. Applesauce and bananas were his two favorite things, so I combined them in this recipe!

At his birthday party, I forgot to label his muffins as toddler muffins and put them amongst the other desserts and food for the adults at the party. People kept coming up to me saying, “Kaileigh, these muffins are amazing!” Whoops! They weren’t meant for the adults, but they were very well-received!

Since then, I would pack them for my work as a healthy snack in addition to my son’s daycare snack. They’re a family favorite!

Ingredient Notes

  • Oat Flour: I use rolled oats that I blend in the blender first until they’re ground, then I add the remaining muffin ingredients. You can use gluten-free oats if needed, or, feel free to replace the oat flour with all-purpose flour or whole wheat flour.
  • Banana: Try to use overripe bananas (with brown spots!) because that will help to make the muffins a little sweeter.
  • Applesauce: Use unsweetened applesauce so that there is no added sugar included in the recipe.

How to Make Banana Applesauce Muffins: STEP-BY-STEP

STEP 1:

Blend 1 1/2 cups oats in the blender until it forms a flour.

STEP 2:

Add baking powder, baking soda, cinnamon, salt, banana, applesauce, and vanilla extract to the blender and blend until just combined.

If you don’t have a blender: You can use regular flour instead of oats. Then, use a large bowl and mash the banana. Finally, add the remaining ingredients and mix to combine.

STEP 3:

Scoop 1/4 cup muffin batter into a muffin pan lined with 10 paper muffin liners.

STEP 4:

Bake in the oven at 400 degrees Fahrenheit for 13 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.

Recipe Tips & Tricks

  • Baby-friendly – I referred to Solid Starts when I began introducing solids to my kids. Their app was VERY helpful for baby-led weaning. These muffins are soft and are a great recipe for baby-led weaning!
  • Add Protein – You can either add some chia seeds/hemp seeds/nuts (see Solid Starts app if introducing nuts to your little on) to add some protein, or serve the muffins with plain yogurt or some nut butter to get some more protein into this healthy recipe!
  • Make Mini Muffins – Mini muffins are fun for little hands, snack time, and lunchboxes!

Storage & Reheating

  • Fridge: Store leftover muffins in an airtight container in the fridge for 3-4 days or at room temperature on the counter for 1-2 days.
  • Freezer: Allow muffins to cool completely before storing. Once cooled, transfer to a freezer-safe airtight container or freezer bag for up to 3 months. Thaw on the countertop at room temperature or heat the frozen muffin in the microwave until heated through. You may want to heat the muffins in the oven for a few minutes to get them a little firm on the outside again.

Additions & Substitutions

Additions:

  • Raisins: These are a yummy addition that would still keep the muffins naturally sweetened! Be sure your child is developmentally ready to safely consume raisins though.
  • Berries: Adding fresh or frozen blueberries, strawberries, raspberries, or blackberries would be a fun addition! Especially if you do a Berry U-Pick over the summer with your kids!
  • Chocolate Chips: Turn these into chocolate chip banana muffins! Chocolate chips are a delicious addition. If your child is under 2 years of age, it is recommended to avoid added sugar.
  • Chia Seeds: You could add chia seeds for an extra nutritional boost without really noticing a change in taste!

Substitutions:

  • Oats: You may use gluten-free oats if needed. You may also use regular all-purpose flour, whole wheat flour (though this will have a stronger taste!), or gluten-free flour.

Ingredients
 

  • 1 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 banana, overripe
  • 1 cup applesauce, unsweetened
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit. Line a muffin pan with 10 non-stick paper liners.
  • Blend 1 1/2 cups oats in the blender until it forms a flour. See notes section if you don’t have a blender.

  • Scoop 1/4 cup muffin batter into a muffin pan lined with 10 paper liners.
  • Bake in the oven for 12-13 minutes or until a toothpick comes out clean when inserted into the middle of a muffin (baking time may vary depending on your oven). Transfer muffins to a cooling rack after 5 minutes to finish cooling.
