Hi there! I’m Kaileigh (pronounced Kay-Lee), the mom, coach, and foodie behind Supermom Eats.

My mission is simple: to help busy moms, like you, build healthier and happier families through food and movement.

I’m here to help you get nutritious meals on the table quickly and easily!

I know firsthand that being a mom is incredibly rewarding but also comes with endless to-do lists, picky eaters, and barely enough time to eat breakfast (let alone make a complicated recipe). That’s why I started Supermom Eats!

Here, you’ll find delicious, healthy vegetarian recipes that can be made in 30 minutes or less, designed specifically with busy moms in mind.

I focus on meals that fuel you and your family, using whole, nourishing ingredients that everyone at the table (even the picky eaters!) will love.

I want you to feel like a Supermom in the kitchen, in your own health, and in your ability to support your kids’ health.

A Little About My Journey

I started this blog when I was on maternity leave with my first son and quickly realized how hard it was to get dinner on the table each night! Fast-forward a few years later, and now I have two sons (with big opinions about food!), and it’s even more challenging.

I am a former special education teacher and have a deep passion for helping kids and their families thrive. I am now lucky enough to work on my blog and my fitness & nutrition coaching business full-time, combining my love for helping others with my passion for nutrition and fitness.

I’m also a FASTer Way to Fat Loss Certified Coach – I’ve been following the program myself since March 2024 and it’s been such a transformative experience. I feel stronger, more energized, and healthier than ever!

The FASTer Way isn’t just about shedding a few pounds; it’s a holistic approach to health that combines whole-food nutrition, efficient movement, and intermittent fasting in a way that supports both mind and body.

I knew I wanted to bring this program to my community as a way to offer a more personalized and well-rounded approach to people’s health, which is why I decided to pursue becoming a Certified Coach in June of 2024!

I’m thrilled to bring this experience to other moms! I know how difficult it can be to find a sustainable way to stay healthy without feeling like you’re sacrificing everything you love.

As a coach, I’m here to support you with practical tools, real-life strategies, and plenty of encouragement.

  • Healthy Recipes for Busy Moms: Each recipe is designed to be made in 30 minutes or less and uses real, wholesome ingredients to support your health goals and satisfy your family. From simple weeknight dinners to kid-approved snacks and breakfasts, these recipes will help you incorporate more plants and nutrients into every meal!
  • Picky-Eater and Dietary Tips: I know how challenging it can be to satisfy different tastes and dietary preferences, especially since my kids and husband all eat meat! That’s why I try to include tips with each recipe on how to make it work for picky eaters and other family members with different preferences.
  • Mindful Sugar Choices: As part of supporting both kids’ and adults’ health, I’m mindful of added sugar in my recipes. My goal is to create recipes that taste great without relying on loads of sugar, like these Banana Applesauce Muffins, so you can feel good about what your family is eating.
  • Support for Your Health Journey: Through FASTer Way coaching, I offer resources and personalized guidance to help you thrive. This goes beyond recipes; it’s about transforming how you approach wellness, so you can feel your best and be the role model you want to be for your kids.

My Mission

At the heart of everything I do is a passion for helping moms build healthier, happier households. I believe that when moms feel strong and energized, it creates a ripple effect that positively impacts everyone around them, especially their kids. Food and movement have the power to change lives, and I’m here to make that journey as approachable and enjoyable as possible.

Fun Facts About Me

  • I grew up overseas in Saudi Arabia and Thailand! We moved overseas when I was five years old. I identify as a “third culture kid” if you have heard of the term! My parents were teachers at the international schools that I attended. It was the most amazing experience and I am so grateful for it!
  • I went to college in Wisconsin – a place I had never been to before and had no family or friends in. In fact, my family was halfway across the world (in Thailand) while I attended college. As a 17-year-old, this was a big step in my independence. I also had noooo idea what cold meant before I lived in WI!
  • I am originally from California and I live there now! We live on the Central Coast and it’s really beautiful! We love spending time at the beach and outside.
  • I became a vegetarian when I was 19! It was prompted by my experience doing a summer internship in India where I ate vegetarian and absolutely loved it! I also witnessed a goat being taken to the slaughter while I was there and heard “the deed” happen – my heart just couldn’t take it, so I decided to eat a vegetarian diet when I returned home.
  • I’ve always LOVED food and even wanted to be a chef or own a cute little café when I was in high school, dreaming about my future career. It was fitting that I found myself with a food blog many years later.
  • I’m a mom of two little rugrats (Ty and Luke) and I couldn’t love them more. They are also my number one taste testers!
