Baked Feta Gnocchi
As you probably know by now, I LOVE gnocchi! Gnocchi is an Italian dumpling, typically made of flour, egg, salt, and potato. My favorite way to eat gnocchi is actually to bake it on a baking sheet so it gets nice and crispy, as I do in my Sheet-Pan Gnocchi with Pumpkin Pasta Sauce, Lemon Parmesan Baked Gnocchi With Zucchini and Chickpeas, and Pesto Baked Gnocchi.
Today, I’m sharing another way to enjoy gnocchi which still provides a very easy-to-make dinner! Instead of baking the gnocchi on a baking sheet, you’ll bake the gnocchi in a baking dish and cover it in a beautiful Roasted Red Pepper and Feta Sauce.
The gnocchi cooks just by being immersed in the sauce – no need to boil the gnocchi first!

Feta Gnocchi Bake Ingredients
Gnocchi
Jar of roasted red peppers
Block of feta
Garlic
Olive oil
Almond milk
Seasoning: oregano, thyme, salt, and black pepper
Shredded mozzarella (optional)
How to Make Roasted Red Pepper and Feta Gnocchi Bake
STEP 1
In a blender, combine drained roasted red pepper, feta, garlic, olive oil, almond milk, and seasoning and blend until smooth.
STEP 2
Spread gnocchi out evenly in an 8×8 baking dish. Then, pour roasted red pepper sauce over the gnocchi and gently toss until the gnocchi is completely coated in the sauce.
STEP 3
If you’d like to, sprinkle shredded mozzarella on top of the gnocchi. Next, bake in the oven for 20 minutes at 425 degrees Fahrenheit. Serve warm.
How to Store Gnocchi
Store any leftover gnocchi in the fridge in an air-tight container for up to 2 days.

Roasted Red Pepper and Feta Gnocchi Bake
Ingredients
- 2 (17.6 ounce) packages gnocchi
- 12 ounce jar of roasted red peppers , drained
- 6 ounce feta block
- 2-3 garlic , minced
- ¼ cup olive oil
- ½ cup unsweetened plain almond milk, (or milk of choice)
- ½ teaspoon salt
- ½ teaspoon oregano
- ½ teaspoon thyme
- Black pepper , to taste
- 1 cup shredded mozzarella, (optional)
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- In a blender, combine drained roasted red pepper, feta, garlic, olive oil, almond milk, oregano, thyme, salt, and pepper and blend until smooth.
- Spread gnocchi out evenly in an 8×8 baking dish. Then, pour the roasted red pepper sauce over the gnocchi and gently toss until the gnocchi is completely coated in the sauce.
- (Optional) Sprinkle shredded mozzarella on top of the gnocchi.
- Bake in the oven for 20 minutes. Serve warm.
